The Recipe Bin: Russian - Entrees: Eggs & Dairy

    Cheese Pierogi Filling
     

     

  • 2 cups Cottage or farmers cheese
  • 2 Eggs - slightly beaten
  • 2 tbsp Sugar
  • 2 tbsp Butter
  • Pinch of salt
  • 6 tbsp Currants - optional
  • ½ tsp Cinnamon - optional
  • ½ cup Raisins - optional
  •  

     
    Cream eggs and butter together. Add other ingredients and mix well. Note: If using cottage cheese, use only the egg yolks.
     

    Makes approximately 8 servings.
