    Holubtsi
    Ukrainian Stuffed Cabbage Rolls

    1 large Head Of Cabbage
    1 cup Cooked White Rice
1 pound Ground Beef Or Pork
    1 Onion (Minced)
    2 cloves Garlic (Minced)
    1 tsp Paprika
    ½ tsp Dried Thyme
    ½ tsp Dried Oregano
    ¼ tsp Black Pepper
    1 cup Tomato Sauce
    1 cup Chicken Broth
    1 tbsp Vegetable Oil
    Salt (To Taste)

    • Preheat the oven to 350°F (175°C).
    • Bring a large pot of water to a boil. Carefully separate cabbage leaves and blanch them in the boiling water for about 3 minutes. Remove and set aside to cool.
    • In a large mixing bowl, combine the rice, meat, onion, garlic, paprika, thyme, oregano, black pepper, and salt.
    • Place about 2 tablespoons of the meat mixture onto the center of each cabbage leaf, then roll tightly, tucking in the sides as you go. Repeat until all the leaves and filling are used.
    • Grease a baking dish with vegetable oil and arrange the cabbage rolls in a single layer. Pour tomato sauce and chicken broth over the rolls.
    • Cover the dish with foil and bake for 45 min. Remove the foil and bake for an additional 15 min, or until the cabbage rolls are cooked through and the sauce is bubbly.
    • Serve hot with some of the sauce spooned over the top.

    Makes approximately 8 servings.
